The tomatoes are sadly coming to an end, but you heard this the other day as well. They have been wonderful to have. Lane believes this is her best tomato year ever. She has canned juice, salsa, and tomatoes, eaten many sandwiches and given many away and there are still more green ones on the vine left to get ripe. For lane no tomato season would be worthwhile without a big batch of spaghetti sauce. She believes it to be much better than you can get in a store. But we have our various beliefs on this one. I prefer the marina recipe given to me by Matello Zuccilini several years ago.

Here is Lane’s;

Half bushel of tomatoes peeled and cut.

Three pounds of onions peeled and cut.

Two green sweet peppers chopped and deseeded.

Two hot peppers chopped and seeded.

Two large garlic cloves minced.

Blend together the above and cook for an hour and then add;

Two tsp basil

Two tsp oregano

Two tbl parlsey

Eight six oz cans tomato paste.

Half cup sugar

Six bay leaves

Half cup canning salt

Cook for an additional hour

Put into hot jars or it can be frozen in bags.

That’s it.
