
It’s another cloudy day here. No rain, just clouds and high humidity.
Lane tells me she doesn’t know if it’s not being able to see the sun or what but she feels really down in the dumps today. She believes its not being able to see the sun for a while that has her feeling blue.
So to try and get her spirits together she thought she would do our blog. I had asked her earlier if she had a topic today and she told me no. she said she didn’t have her thoughts together and was unable to focus. She thought she would give it a try as talking always makes her feel better so here goes.
She has noticed that all the gardens around here are gone already and the only thing she sees in them now are greens and more greens. The guy she works with at the post office still has some tomatoes in his garden as does lane. She thinks we are the only ones that are that lucky. She still has late squash and a few beans left as well. She has a lot of green tomatoes that aren’t turning so she has been looking for a way to use them. Her friend Kathy at the post office has a friend who has a good recipe for using green tomatoes that her grandmother gave her. So lane has decided to share it with you. The name of the recipe is green tomato sandwich spread. She has heard it’s delicious.
A peck of green tomatoes chopped
A peck of sweet pepper chopped
Twelve large onions chopped and drained
Throw this in a pot and add
Three cups of sugar
A pint of vinegar
Salt to taste and cook until thick
Then add a quart of mayonnaise
A pint of mustard and bring everything to a boil and put in hot jars.
She hasn’t tried it yet but plans to on Monday.
Lane knows you might be sick of hearing about tomatoes so she is searching for another topic. As we are covered with tomatoes it may take a while to discover that topic.
